Drawing inspiration from Italian culture and cuisine, we aspire to create innovative, flavorful dishes that transcend cultural, regional, and culinary boundaries. Our aim is to craft a unique fusion that captures the essence of a diverse culture.

 

When pondering true richness in the context of our times, we believe it is fundamentally rooted in food. This is the most profound lesson I have learned from Italian cuisine.

●2013/ July  Obtains Italian National AIS Wine Sommelier Certification

●2014 / January  Obtains Italian AIS Olive Oil Sommelier Certification

●2014/ April  Held first Kyushu collaboration dinner with Roberto Bellini, Vice President of the Italian Sommelier Association (AIS), during his visit to Japan

●2014 / October  Catering for distinguished guests from both nations at the Japan-America Council Annual Conference held in Waikiki, Hawaii

●2014–Present Annual participation in the 【A-Class Gourmet Festival】 as Executive Committee Chairperson/Lead Chef Coordinator.  Hosted by FM Fukuoka Radio, Kyushu's largest gourmet festival (attracting 60,000 visitors annually)

●2015 / April  Appointed Chairman upon the establishment of the Kyushu Italian Cuisine Association (A.C.C.I.K)

June 2015 Assistant appearance at Identità Golose, Expo Milano

●2015 / June  Participated in a collaboration dinner at Ristorante Sadler, Milan

●2017  Product Development Manager at Munakata Roadside Station ※Japan's top-ranked roadside station

●2018 January  Relocated and reopened DA FUCHIGAMI HAKATA in Kamikawabata-machi, Hakata Ward, Fukuoka City

●2019 Featured in the Michelin Guide Fukuoka, Nagasaki, Saga Special Edition

●2022 Temporarily closed due to the impact of COVID-19

●Present  Appointed as Chef FUCHIGAMI at the same address

●2023 Selected for IW100 (Japan's Top 100 Italian Restaurants)

●2024 / April –Present: Overseeing and providing meals aboard JR Kyushu's special Gastronomy train “Kanpachi Ichiroku”

●2024  Selected for IW100 (Japan's Top 100 Italian Fine Dining Restaurants)

●2024/ July  Barilla PASTA CHAMPIONSHIP ASIA 2024 Japan Competition Winner

●2024 / October Barilla PASTA CHAMPIONSHIP ASIA 2024 Asia Grand Final Winner

●2025 / January  IW100 (Japan's Top 100 Italian Fine Dining Restaurants Restaurants) Best Pasta Award Winner

●2025 / August  Served as Judge for Barilla PASTA CHAMPIONSHIP ASIA 2025

 

 

●Numerous appearances in local gourmet magazines and food segments on local TV stations.

●Also hosted numerous manufacturer dinners featuring Italian winemakers and others at his restaurant.

●Collaborated extensively with many of Japan's leading chefs.

●Handled numerous tie-ups and supervisory roles with restaurants and companies both in Japan and overseas.
